Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean, split and scraped
- 6 large egg yolks
Instructions:
Put the sugar, vanilla bean with the seeds scraped out, heavy cream, and whole milk in a saucepan
Heat the mixture over medium-low heat until it starts to steam
Whisk the egg yolks in a different bowl until they are foamy and light
Pour the hot cream mixture into the egg yolks slowly while whisking all the time to temper the eggs
Put the mixture back into the saucepan
Cook on low heat while stirring it all the time until it gets thick enough to coat the back of a spoon
Take the pan off the heat and use a fine-mesh sieve to strain the mixture into a clean bowl
This will get rid of the vanilla bean pod and any egg that has been cooked
Make sure the plastic wrap touches the custards surface so that a skin doesnt form on top of it
Put the custard in the fridge for at least four hours or overnight
Once the custard is cold, use an ice cream maker and follow the directions on the box until its the consistency of soft serve
Cover the churned ice cream and put it in a container that can go in the freezer
Freeze for at least 4 hours, or until it is firm
