Low Carb Chocolate Birthday Cake

This tasty low-carb chocolate birthday cake is a treat you can enjoy without feeling bad about it. Its moist and rich, and made with almond flour and cocoa powder. Its great for any event. Also, it works for people on the keto diet and for people with PCOS.

Ingredients:

  • 2 cups almond flour
  • 3/4 cup cocoa powder
  • 1/2 cup powdered erythritol sweetener
  • 1/4 cup coconut flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/2 cup melted butter
  • 2 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips optional

Instructions:

Preheat oven to 350F 175C

Grease and line two 8-inch cake pans with parchment paper

In a large bowl, whisk together almond flour, cocoa powder, erythritol sweetener, coconut flour, baking powder, and salt

Add eggs, almond milk, melted butter, and vanilla extract to the dry ingredients

Mix until well combined

Fold in sugar-free chocolate chips if using

Divide the batter evenly between the prepared cake pans

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely

Once cooled, frost the cake with your favorite keto-friendly frosting and decorate as desired
