Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- teaspoon salt
- 1 cup fruit preserves of your choice
- Powdered sugar, for dusting
Instructions:
In a large bowl, cream together the butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the flour and salt, mixing until just incorporated
Do not overmix
Divide the dough into two equal portions, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour
Preheat the oven to 350F 175C and grease a mini tartlet pan
Roll out one portion of the dough on a lightly floured surface to about 1/8 inch thickness
Using a round cookie cutter, cut out circles slightly larger than the tartlet molds
Gently press the dough circles into the tartlet molds, ensuring even coverage and pressing up the sides
Place a teaspoon of fruit preserves into each tartlet
Roll out the second portion of dough and use a smaller cookie cutter to cut out decorative tops for the tartlets
Place the decorative dough cutouts on top of the preserves
Bake in the preheated oven for 12-15 minutes, or until the edges of the tartlets are golden brown
Allow the tartlets to cool in the pan for a few minutes before transferring to a wire rack to cool completely
Once cooled, dust the tartlets with powdered sugar before serving
