Mexican Cauliflower Recipe

This recipe for Mexican cauliflower is a tasty and flexible side dish that goes well with any keto-friendly meal. Chili powder, cumin, paprika, garlic powder, and onion powder are mixed together to season tender cauliflower florets. The florets are then roasted until they turn golden and caramelized. Add fresh cilantro on top and serve with lime wedges for a flavor boost.

Ingredients:

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions:

Set the oven to 425F 220C and heat it up

For easy cleanup, line a baking sheet with foil or parchment paper

Toss the cauliflower florets with olive oil in a large bowl until they are well covered

Chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper should all be mixed together in a small bowl

Add the seasoning mix to the cauliflower and mix it around to cover it

Spread the cauliflower florets that have been seasoned out on the baking sheet that has been prepared

Put the cauliflower in an oven that has already been heated up

Bake for 20 to 25 minutes, stirring it once, until it is soft and golden brown

Take the cauliflower out of the oven and put it on a serving dish

Serve with lime wedges on the side so that you can squeeze them over the cauliflower before you eat it

Garnish with chopped fresh cilantro
