Easy Chicken Tacos

On busy weeknights, these Easy Chicken Tacos are a quick and tasty way to feed your family. Tender chicken, sauted vegetables, and traditional taco toppings make a quick and easy dinner.

Ingredients:

  • 1 lb boneless chicken breasts, diced
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 lime, cut into wedges

Instructions:

Heat a skillet over medium-high heat and add a bit of oil

Add diced chicken to the skillet and cook until no longer pink, about 5-7 minutes

Sprinkle taco seasoning over the chicken and stir to coat evenly

Add diced tomatoes, onions, and bell peppers to the skillet

Cook for an additional 3-4 minutes until veggies are tender

Warm the flour tortillas in a separate pan or microwave as per package instructions

To assemble tacos, spoon the chicken and veggie mixture onto each tortilla

Top with shredded cheddar cheese and chopped cilantro

Serve with sour cream, salsa, and lime wedges on the side
