Ingredients:
- 1 cup heavy cream
- 1 cup whole milk
- 4 large egg yolks
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3 ounces foie gras, chilled and chopped
Instructions:
Over medium heat, bring the heavy cream and milk to a simmer in a saucepan
Whisk the egg yolks, sugar, and salt together in a different bowl until they are well mixed
Slowly add the hot cream mixture to the egg mixture while whisking it all the time to temper the eggs
Put the mixture back in the saucepan
Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon
Taking it off the heat, add the vanilla extract and mix it in
Through a fine-mesh sieve into a clean bowl to get rid of any lumps
Put the mixture in the fridge for at least 4 hours, or until it is very cold
After the mixture has been chilled, use an ice cream maker according to the directions that came with it
Add the chopped chilled foie gras in the last few minutes of churning and keep going until it is well mixed in
Put the ice cream in a container that can go in the freezer
Freeze it for at least 4 hours, or until it is firm
Serve this dreamy ice cream and enjoy the rich flavors of foie gras
