Ingredients:
- 8 large shiitake mushrooms, sliced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 teaspoon maple syrup
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 4 slices whole grain bread
- 2 tablespoons vegan mayonnaise
- 1 cup lettuce leaves
- 1 large tomato, sliced
- Salt to taste
Instructions:
Before you start cooking, heat the oven to 375F 190C
Salt, black pepper, smoked paprika, soy sauce, and maple syrup should all be mixed together in a bowl
Toss the shiitake mushroom slices in the bowl until they are covered all over
The mushroom slices should be put on a baking sheet that has been lined with parchment paper
After the oven is hot, put the mushrooms in it and bake for 15 to 20 minutes, flipping them over halfway through
Toast the pieces of bread until they turn golden brown
Vegan mayonnaise should be spread on one side of each piece of bread
On two of the bread slices, arrange tomato slices, lettuce leaves, and shiitake mushroom bacon
Add salt to your liking
Add the last few slices of bread on top to make a sandwich
Serve the sandwiches right away after cutting them in half
