Ingredients:
- 250g macaroni pasta
- 200g chorizo sausage, diced
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish optional
Instructions:
Follow the directions on the box to cook macaroni until it is al dente
Remove the water and set it aside
Dice the chorizo sausage and cook it in a large skillet until it gets brown and crispy
If you need to, take off the extra grease
Over medium heat, melt the butter in the same pan
Add the flour and stir it in
Cook for one to two minutes, until it turns yellow
Gradually whisk in the milk while stirring all the time until the mixture is smooth and thick
Turn down the heat and add the shredded mozzarella and cheddar cheese
Mix the cheeses together until they melt and become smooth
Salt and pepper should be added to cheese sauce
Mix the cooked macaroni into the cheese sauce until its well covered
If you want, you can serve it hot with chopped fresh parsley on top
