Ingredients:
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup vegan butter, softened
- 3/4 cup coconut sugar
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup dried cranberries, chopped
- 1/4 cup vegan white chocolate chips or chunks
- 1/4 cup chopped pecans or walnuts
Instructions:
Preheat your oven to 350F 175C
Line an 8x8-inch baking pan with parchment paper
In a small bowl, whisk together the gluten-free flour, baking powder, and salt
In a large mixing bowl, cream together the vegan butter and coconut sugar until light and fluffy
Add the applesauce and vanilla extract to the butter mixture and mix until combined
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Fold in the chopped cranberries, white chocolate chips, and chopped nuts
Press the dough evenly into the prepared baking pan
Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean
Allow the bars to cool completely in the pan before cutting into squares
