Gluten-Free Fluffernutter Cookies

These gluten-free cookies have the classic fluffernutter mix of marshmallow fluff and peanut butter in the shape of a cookie. They are chewy and sweet, and theyre great for satisfying your cravings without having gluten.

Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup marshmallow fluff
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

Preheat oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine peanut butter and sugar until well blended

Add the egg and vanilla extract, mix until smooth

Stir in marshmallow fluff until evenly distributed

In a separate bowl, whisk together gluten-free flour, baking soda, and salt

Gradually add dry ingredients to the peanut butter mixture, mixing until fully incorporated

Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, leaving space between each cookie

Flatten each cookie slightly with a fork, creating a crisscross pattern

Bake for 10-12 minutes, or until edges are lightly golden

Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely

Ingredients:

  • 1 can 16
  • 3 oz refrigerated biscuits

  • 2 cups shredded mozzarella cheese

Instructions:

In a large mixing bowl, combine the biscuit quarters, pizza sauce, 1 1/2 cups of mozzarella cheese, sliced pepperoni, black olives, bell peppers, and onions

Mix well to coat everything evenly

Transfer the mixture to a greased 9x13-inch baking dish

Sprinkle the remaining 1/2 cup of mozzarella cheese over the top

Sprinkle dried oregano and garlic powder evenly over the cheese

Add red pepper flakes for a spicy kick if desired

Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown and the cheese is bubbly and melted

Remove from the oven and let it cool for a few minutes before slicing

Ingredients:

  • 1 lb Mahi Mahi fillets, finely chopped
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh cilantro
  • 1 tsp lime zest
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 2 tbsp avocado oil, for cooking
  • Lettuce leaves, for serving
  • Sliced avocado, for serving
  • Tomato slices, for serving

Instructions:

Chop the Mahi Mahi and put it in a bowl

Add the red onion, garlic, cilantro, lime zest, cumin, paprika, salt, and black pepper

In a pan, heat the avocado oil over medium heat

Instructions:

Remove the water and set it aside
